Focaccia with sardines and roasted cherry tomatoes

When you have bought a bake at home bread, bake it as indicated on the packaging. When you have bought a fresh bread, follow below instructions.

Preheat the oven to 200 degrees Celsius. Place the cherry tomatoes on top of the baking paper and place them in the oven for 8 minutes. After 8 minutes, also place the ready-made focaccia in the oven with the tomatoes (for approx. 6 minutes). Take the tomatoes out of the oven once their skin has cracked and they are nice and soft.

Remove both the bread and the tomatoes from the oven after approximately 12 – 14 minutes (in total) and let them cool for a few minutes. Cut the crusty bread into square pieces of approximately 6 by 6cm.

Open the can of sardines and drain the oil. Cut the sardines into pieces and put these with the adhering oil and roasted tomatoes onto the focaccia. Sprinkle with coarsely ground pepper and salt, according to your personal preference.

Finely chop some basil or fresh chives as extra garnish.

  • Finely cut basil or chives
